What's it all about?
On our farm just out of Orange, NSW, my husband Tim and I farm deer and then sell our venison at farmers markets and through a wholesaler in Sydney to restaurants and retail outlets. We farm according to holistic principles which means we use a rotational cell-grazing program. This means the animals spend short periods of time in small paddocks and then those paddocks are left to rest for up to 120 days each. The results are richer natural pastures, quieter animals and less need for expensive inputs such as fertiliser and supplimentary feed such as barley or sileage.
Our venison is 100% hormone free of antibiotics, stimulants and growth promotant hormones. Tender, healthy and versatile, we believe it is an exciting alternative read meat.
